Because that’s their job and they’re already getting paid to do that. I don’t tip the cashier for ringing up my food, I don’t tip the bag boy for bagging up my groceries, I don’t tip the door for automatically opening, so…
They’re able to price their food lower when you’re tipping. One way or another, by eating at a restaurant you’re paying for their wages. Whether its by higher priced food that’s the same quality or by your judgement on how the service was. That’s another bonus too, if they’re getting paid hourly they wont go above and beyond but with tips as an incentive they’ll work harder and ultimately your experience will be better
